Mediterranean Marinated Cucumber Salad
Ingredients
* 5–6 mini cucumbers, sliced
* 2 tbsp olive oil
* 1 tbsp lemon juice
* 2 garlic cloves, minced
* 1 tsp dried dill (or 1 tbsp fresh dill, chopped)
* ½ tsp Italian seasoning
* ½ tsp red chili flakes
* ½ tsp salt
* ¼ tsp black pepper
* 2 tbsp crumbled feta cheese
* 1 tsp sesame seeds (optional)
Instructions
1. Wash and slice the mini cucumbers into thick rounds.
2. In a large bowl, whisk together the olive oil, lemon juice, garlic, dill, Italian seasoning, chili flakes, salt, and black pepper.
3. Add the cucumber slices and toss well until evenly coated.
4. Gently fold in the crumbled feta cheese and sesame seeds.
5. Cover and refrigerate for 20–30 minutes so the flavors can develop.
6. Toss once more before serving.
