- 1 cup ricotta cheese
- 1 cup fresh spinach, finely chopped (or ½ cup frozen, thawed & squeezed dry)
- ¼ cup grated Parmesan cheese
- 1 clove garlic, minced

- ½ teaspoon dried oregano or Italian seasoning (optional)
- 1 egg

Instructions
1. Prep
Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
2. Make the filling
In a bowl, mix:
- Ricotta
- Spinach (well-drained if frozen)
- Parmesan
- Garlic
- Salt, pepper, seasoning
- 1 egg
Mix until smooth and creamy but still slightly textured.
Method A: Puff Pastry Bites (Quick & Flaky)
- Roll out puff pastry and cut into small squares (about 2–3 inches).
- Place a spoonful of filling in the center of each square.
- Fold into triangles or rectangles and seal edges with a fork.
- (Optional) Brush tops with a little egg wash for a golden finish.
- Bake for 15–20 minutes until puffed and golden.
Method B: Crispy Spinach Ricotta Balls
- Scoop small portions of filling and roll into balls.
- Lightly coat in flour, dip in beaten egg, then roll in breadcrumbs.
- Place on tray and lightly spray or brush with oil.
- Bake for 15–20 minutes, flipping halfway, until golden and crisp.
