Mediterranean-Style Crustless Quiche

“No crust, no guilt 😍 This Mediterranean quiche is light, fluffy & FULL of flavor!”

Ingredients:

  • 6 large eggs
  • ½ cup milk (or almond milk)
  • ½ cup crumbled feta cheese 🧀
  • 1 cup spinach (chopped)
  • ½ cup cherry tomatoes (halved) 🍅
  • ¼ cup red onion (finely chopped)
  • ¼ cup olives (sliced)
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt & black pepper (to taste)

 Instructions:

1️⃣ Prep

  • Preheat oven to 180°C (350°F)
  • Grease a baking dish with olive oil

2️⃣ Mix

  • In a bowl, whisk eggs + milk
  • Add salt, pepper & oregano

3️⃣ Assemble

  • Spread spinach, tomatoes, onion & olives in dish
  • Pour egg mixture on top
  • Sprinkle feta evenly

4️⃣ Bake

  • Bake for 30–35 minutes until set & golden

5️⃣ Cool & Serve

  • Let it rest 5–10 minutes
