Mediterranean-Style Crustless Quiche
“No crust, no guilt 😍 This Mediterranean quiche is light, fluffy & FULL of flavor!”
Ingredients:
- 6 large eggs
- ½ cup milk (or almond milk)
- ½ cup crumbled feta cheese 🧀
- 1 cup spinach (chopped)
- ½ cup cherry tomatoes (halved) 🍅
- ¼ cup red onion (finely chopped)
- ¼ cup olives (sliced)
- 1 tbsp olive oil
- 1 tsp dried oregano
- Salt & black pepper (to taste)
Instructions:
1️⃣ Prep
- Preheat oven to 180°C (350°F)
- Grease a baking dish with olive oil
2️⃣ Mix
- In a bowl, whisk eggs + milk
- Add salt, pepper & oregano
3️⃣ Assemble
- Spread spinach, tomatoes, onion & olives in dish
- Pour egg mixture on top
- Sprinkle feta evenly
4️⃣ Bake
- Bake for 30–35 minutes until set & golden
5️⃣ Cool & Serve
- Let it rest 5–10 minutes
