Avocado & Whipped Cottage Cheese Sweet Potato Toasts

Ingredients
* 2 medium sweet potatoes, sliced lengthwise into 4 thick slices
* 1 tablespoon olive oil
* 1 teaspoon paprika
* 1 teaspoon garlic powder
* Salt, to taste
* Black pepper, to taste
* 1 cup whipped cottage cheese (or whipped ricotta)
* 1 ripe avocado, sliced
* 2 tablespoons chopped fresh chives
* 2 tablespoons chopped fresh parsley or cilantro
* 1 teaspoon red chili flakes
* 1 tablespoon hot honey (or regular honey)
* 1 lime, cut into wedges
Instructions
1. Preheat the oven to 220°C (425°F).
2. Brush the sweet potato slices with olive oil and season with paprika, garlic powder, salt, and black pepper.
3. Bake for 25–30 minutes, flipping halfway through, until tender and lightly caramelized.
4. Let the sweet potato toasts cool for 2–3 minutes.
5. Spread a generous layer of whipped cottage cheese over each toast.
6. Arrange avocado slices on top.
7. Sprinkle with chopped chives, parsley, and red chili flakes.
8. Drizzle with hot honey.
9. Squeeze fresh lime juice over the top just before serving.
