- 10 g sea salt (2% brine for 500 ml water)

Step 1: Prepare the Brine
In a clean bowl or measuring cup, dissolve the sea salt completely in the filtered water, stirring until no salt crystals remain.
Step 2: Prepare the Ingredients
Peel and gently smash the garlic cloves. Wash the limes well and slice them into thin rounds. Rinse the fresh mint and pat it dry.
Step 3: Fill the Jar
Place the garlic, lime slices, and mint into a clean glass jar. Pack them loosely to allow the brine to circulate.
Step 4: Add the Brine
Pour the prepared brine into the jar until all the ingredients are completely submerged. If necessary, use a fermentation weight or a clean small glass weight to keep everything below the liquid.
Step 5: Ferment
Seal the jar loosely or use a fermentation lid. Leave it at room temperature (around 18–24°C / 65–75°F), away from direct sunlight, for 5–7 days. If using a regular lid, briefly open (“burp”) the jar once daily to release any built-up gas.
Step 6: Refrigerate
Taste the infusion after 5 days. Once it reaches your preferred flavor, transfer the jar to the refrigerator. The cool temperature slows fermentation and helps preserve freshness.
