Ingredients
* 4 boneless, skinless chicken breasts
* 2 cups pineapple chunks (fresh or canned, drained)
* 2 medium zucchinis, sliced
* 1 red bell pepper, sliced
* 2 tablespoons olive oil
* 3 cloves garlic, minced
* 2 tablespoons soy sauce
* 2 tablespoons honey
* 1 tablespoon lemon juice
* 1 teaspoon smoked paprika
* ½ teaspoon black pepper
* ½ teaspoon salt
* 2 tablespoons chopped green onions (for garnish)
Instructions
1. Preheat the oven to 400°F (200°C) or heat a grill to medium-high.
2. In a small bowl, whisk together the olive oil, garlic, soy sauce, honey, lemon juice, smoked paprika, salt, and black pepper.
3. Place each chicken breast on a large sheet of aluminum foil.
4. Arrange zucchini slices, bell pepper, and pineapple chunks around and on top of the chicken.
5. Spoon the sauce evenly over each packet.
6. Fold and seal the foil tightly to create packets.
7. Bake for 25–30 minutes, or grill for 20–25 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
8. Carefully open the packets, garnish with chopped green onions, and serve hot.
